(VOVWORLD) - The traditional folk knowledge surrounding bún bò Huế or Hue beef noodle soup has been recognized as a National Intangible Cultural Heritage by the Ministry of Culture, Sports and Tourism. This acknowledgment affirms the historical, cultural, artistic, and economic value of this iconic dish, which embodies the identity of Vietnam’s former imperial capital.

Hue beef noodle soup has long been a famous dish in Vietnam and overseas. It represents a culmination of folk knowledge that has been preserved and passed down through generations. Closely associated with local beliefs, community life, and traditional noodle making villages like Van Cu and O Sa, the dish reflects the spirit, lifestyle, and culinary soul of the people of Hue.

A bowl of authentic Hue beef noodles has a broth infused with lemongrass and fermented shrimp paste. Chili oil and green onions add extra color to the bowl. Every chef has a secret for making his/her bowl of beef noodles unique.

In Hue, beef noodles are served by famous eateries like Me Keo, Mu Roi, Ba Tuyet, and Ong Vong and by humble street vendors. It is served throughout the day and is has been called the “soul of Hue.”

Chef Phan Ton Gia Hien said: “To make a truly delicious bowl of beef noodles, the cook must have skill, sophistication, and attention to every step of the process.”

Preparing Hue beef noodles, from selecting ingredients and simmering the broth to seasoning and presentation, is a skill that has been carefully preserved and developed by the community.

Director of the Hue Department of Culture, Sports and Tourism Phan Thanh Hai said the national heritage recognition provides extra motivation for preserving and promoting Hue beef noodles. Hue authorities are implementing a plan to promote the heritage recognition to help Hue become a UNESCO Creative City of Gastronomy.

Hai said:  Its important to develop a brand for the folk knowledge of Hue beef noodles, including clearly documenting the cooking techniques, the culinary experience, and especially cultural stories about the dish.”

In 2014, world-renowned culinary expert Anthony Bourdain introduced Hue beef noodles on the American television network CNN, calling it “the greatest soup I’ve ever tasted.” In 2016, the dish was listed among the Top 100 Asian Dishes with Culinary Value by the Asian Record Organization. In 2023, Taste Atlas, a globally acclaimed culinary website, ranked Hue among the Top 100 Food Cities in the World, with beef noodles highlighted as a “must-try delicacy when visiting the city.”
