A: Well, it seems you’re in love with summer, huh?
B: Yep, how about you?
A: Who? Me? What do I think about summer? Uhm, the sticky skin, melting makeup, smeared eyeliner, super-sticky lipstick, and, of course, the feeling of sunshine cutting though me like a knife. It’s terrible, honey.
B: Come on, you can’t be serious. Summer is the time of year when people spend a great deal of time outdoors, when most children have a long vacation from school. And summer is also the beginning of fruit season, berries, peaches, apricots, and your favorite, mangoes. Right? So, change your attitude, honey.
A: Ok, ok. So, summer fruit. Does it relate to the recipe today?
B: It does. Today, we’re gonna to make “Raspberry tart”, a very familiar dessert recipe for anyone who loves to cook. The tart is not only wonderfully delicious, but goes perfectly with this crazy hot weather.
A: Wow, I love “Raspberry tart” so much. This beautiful tart is a great combination of sweet white chocolate, fresh raspberries, crunchy Oreo cookies, smooth whipping cream, and creamy mascarpone cheese. How wonderful!

B: And I’ve got good news for you. I met Trang Minh, a famous food blogger who has more than 15000 followers on Facebook. She and her cooking team have published a book titled “Pie-Tart”, introducing 40 wonderful recipes. She will be in the studio today to teach us how to make this wonderful “Raspberry tart”.
A: That’s awesome. Let’s start with the tart shell. “The ingredients for making this tart are very basic. As this is a non-bake recipe, I use Oreo cookies to create a decadent dark chocolate crust. The Oreo crumbs are mixed with melted butter, and then carefully pressed onto a tart tin. Put the tin in the refrigerator to firm the crust. Since Oreo cookies contain more butter than other cookies, for this recipe you should reduce the amount of melted butter.”

A: Wow, just refrigerate until ready to use. That’s perfect. You know, on such a hot day, this refreshing recipe will cool you off. No oven is required.
B: Yep. What about the filling?
A: The filling for this dessert is so delicious and very simple to prepare. White chocolate, mascarpone, an Italian cheese made from cream, and whipping cream is all you need. Trang Minh elaborates: “The crust has a strong cocoa flavor, so for the filling I use white chocolate, whipping cream, and mascarpone cheese to create a softer sweetness and balance the flavor. I prefer to go with mascarpone cheese in this recipe rather than cream cheese, because it has a very smooth texture with no lumps or graininess. I chose the gentle sweetness of white chocolate rather than sugar or honey.”
A: The filling should be left for 20 minutes in the fridge to cool before being poured into the chilled crust. Smooth out the filling with the back of a spoon.
B: For the topping, you should prepare whipping cream, and raspberries. Trang Minh again: “Finally, I top the tarts with loads of raspberries. Like their cousins, the blackberries, raspberries go well with both black and white chocolate or cocoa flavor. A: This is the kind of dessert that is really easy to put together but makes an impressive presentation. Raspberries are low in calories and wonderfully delicious. They ripen in early July and in most of the warm months.
B: Because raspberries are not cultivated in Vietnam, you can buy them in supermarkets or minimarts of imported goods
A: You should look for raspberries that have a deep red color, and be sure to avoid berries that are soft and mushy or have bruises, or black spots. If possible, you should choose raspberries of uniform size to make the tart look its best.
