B: Hello, you guys. Yesterday, I got home from a long day of work wishing I already had a cooked meal waiting for me on my dining table. I like to cook, but sometimes, I find all the preparation and cleaning up too tiresome.
A: Well, we all have those days when we just don't feel like spending a few hours in the kitchen and making an elaborate dinner. So, a quick and delicious recipe like “Macaroni and cheese” can be a real lifesaver.
B: Oh, A. Why didn't you tell me earlier? Macaroni and cheese or Mac and cheese, which is easy to make, cheesy, and creamy, is a family favorite. This is a dish to fill you up and is for all ages.
A: There are many recipes available. Most people already have their favorite way of making it, and so does Andrew Diatroftoff from San Fransisco, California. He shared with us the way he makes his mac and cheese. “For macaroni and cheese, you cook the macaroni pasta, you put the water on the stove top and you wait for it to boil, about 9 minutes. And when it’s boiled, you pour all the macaroni in and sprinkle some sea salt in there, and then you put it on medium, about a little lower than medium, actually. And then you wait for it to cook in about 11 minutes. I thought that 11 minutes is perfect time for pasta. And then you drain the macaroni pasta in a strainer and then you pour it back into the pot.”

A: The most important thing in making this dish is choosing the appropriate type of cheese. Andrew suggests three type of cheeses, which are cheddar, provolone, and goat cheese.
B: Provolone is an Italian cheese made from cow’s milk whose origins lie in Southern Italy. Cheddar cheese, which originated in the village of Cheddar in the Somerset region of England, is a compact and crumbly cheese made from cow's milk.
A: Easier to digest than cow products, goat cheese can be a great alternative for people who are intolerant to cow’s milk. According to Andrew, those 3 types of cheese go very well together with the macaroni, making a gorgeous creamy dish that you’ll want to make regularly. “I like different kinds of cheese, like cheddar, provolone, or goat cheese. You can use whatever cheese you want, and since the pasta is already hot, it will melt a lot of the cheese that you put inside there. Then you can stir it with a wooden spatula, and then pour a little bit of cream in there. It’s very creamy and delicious.
A: The mac and cheese recipe of Andrew is easy but remember not to walk away from the cheese sauce. Keep whisking constantly while it is on the stove to keep it smooth and creamy. Seriously, when you’re cooking this sauce, you might find it incredibly hard to not lick the stirring spoon as it smells terribly good.

B: Well, if you have a little extra time, you can give your mac and cheese a golden crust by baking it uncovered in the oven in about 20 minutes. Leftovers can be kept for up to 4 days in fridge and can be reheated in the microwave. If the sauce is a little dry after reheating, you can mix in a splash of milk to make it creamy again.
A: This nice rich mac and cheese can be served with salad or just by itself for a great, simple dinner. Whatever the reason, whatever the occasion, a giant bowl of mac and cheese will always spell comfort. “I usually, probably make it on Monday, or like Wednesday when you’re super busy, you get home late, and you just want to make something quick. You can have wine. I prefer red wine as I’m not a fan of white. I just find white wine a little too sugary for my taste.”
