A: Welcome to “Food Delight”, where we bring you new culinary tips to help you enjoy yourselves in the kitchen. We’re A and B saying hello to all our lovely foodies.
B: Hello you guys and gals. We’re all familiar with the classic beer-cooked chicken recipes, however in today’s Food Delight, let’s mix things up a little by taking this fantastic cooking style to the next level. Beer recipes are so played out, so we’re going to be replacing the beer with cider, an alcoholic beverage made from the fermented juice of apples.
A: With a flavorful cider glaze over some tender and juicy chicken, this dish is a meal you’ll love to make again and again. Using just half a bottle of cider, double cream, olives, mushrooms, onions and chicken breast, “Cidered chicken” takes just 30 minutes or less to prepare, which is perfect for those nights when you just don’t feel like putting in a lot of effort.

B: There’s not too much preparation work for such a healthy dinner. Taking a look in the pan you’ll see juicy seared chicken, bubbling apple cider, and adding a few springs of rosemary on top is sure to make your whole kitchen smell like heaven. More importantly, this cidered chicken recipe needs only one pan to prepare! In my own culinary dictionary, “one pan” means “almost zero clean up”. Delicious-Fast-No clean up makes cidered chicken a perfect kitchen combo!
A: That sounds good, B. And for those dying to know how to make this dish, we’ve invited my friend Abby Chitty from the UK, who will elaborate on how she likes to make “Cidered chicken”. “This is a dish that my dad will often make for a dinner party. Basically, what it is, is you get a cut of chicken like chicken breast, and you fry it, adding about half a bottle of cider and some double, or sour cream. But in my opinion, double cream is best. You put it all in a pan and then add olives, onions, and mushrooms. Let it cook and simmer down to the point where the liquid isn’t too light, so it makes a sort of sauce, and then serve with rice.”
A: The cider not only gives the dish a subtle apple flavor, but the acidity of the liquid naturally enhances the flavor of the chicken, in much the same way that lemon juice does. The sourness of cider makes the dish easier to digest, even though it’s so creamy.
B: Well, apple cider, chicken, and double cream have been combined to create a flavor that’s so hard to resist. In fact, I suggest you double the amount of cream so you'll have a little extra to spoon over side dishes like rice or breads.

A: Abby still has some tips to help you really emphasise the flavour of the chicken. Let’s find out more: “You should cook the chicken first, and you can cook the mushrooms and the onions separately if you’d like. I think the secret, is probably in getting the right cider to cream ratio, as too much cider can make the consistency a bit overwhelming. So what you want is to have more cream than cider. It tastes so good. We often have it at New Years, because you can make it for a lot of people and it just looks so appetising.”
A: The cidered chicken is then served warm with a side of rice as Abby suggested. The recipe is best enjoyed the day it is made, but can last up to 1 to 2 days in the fridge. Gently reheat the leftovers in the microwave, or on the stovetop, with a bit of chicken broth to keep the chicken from drying out.
B; Imagine sinking your fork into this buttery, fall-off-the-bone apple cider chicken with juicy mushrooms and onions before lifting the fork to your mouth and experiencing the truly heavenly flavor. I mean, this creamy treat will win your hungry heart over, or easily become a new favorite for apple lovers.
