Taste Atlas reported that Pho is a Vietnamese noodle soup, Vietnam's national dish, street food, comfort food, and a way of life. It is traditionally made with chicken or beef broth, where the bones simmer lazily for at least three hours until the broth is perfect. The addition of herbs and spices accentuates the flavors, and the chewy rice noodles, juicy beef slices, and crunchy sprouts elevate the dish to another level.
In addition to Pho, Vietnam is also considered a "paradise" of Bun (rice vermicelli dishes). Several Bun dishes were featured in the Taste Atlas ranking, including Hue Breakfast Noodle Soup at 16th, Tomato and Crab Noodle Soup at 31st, Fermented Fish Noodle Soup at 50th, Fried Fish Cake Noodle Soup at 52nd, Pork Ball Vermicelli Soup at 53rd, Rice Vermicelli with Jellyfish and Fish at 74th, Kien Giang Fish and Shrimp Noodle Soup at 82nd, and Smooth Rice Noodle Soup with Fish at 85th.
The website also recognized a number of other Vietnamese specialty noodle dishes, such as Red Noodle Soup with Crab at 33rd, Nam Vang Noodle Soup at 35th, Vietnamese Thick Noodle Soup at 43rd, Vietnamese Noodle Soup with Pork and Shrimp at 79th, Cellophane Noodles with Eel at 86th and Crab Tapioca Noodle Soup at 88th.
